No. All data is stored exclusively on your Mac at ~/Library/Application Support/Billly. Nothing is ever sent to external servers.

Invoices are generated as PDFs and saved locally. From there you can send them via email, print them, or share them via Finder.
Yes. You can set your VAT rate in Settings. There's also a small business (§19 UStG / Kleinunternehmer) option which suppresses VAT disclosure on invoices.
